Clean and bright. Cherry red colour with garnet evolution. Notes of toast and vanilla. Marmalade of ripe red fruits characteristic of the area. Very well assembled. Spicy notes (cinnamon), reminiscent of cedar. In the mouth is complex and structured. Volume sensation in the mouth. Final is long and hints of nuts.
Matches cutlets with vine shoots; Stewed Chicken; Sirloin steak with Roquefort sauce; Ravioli stuffed with beef; Grilled Entrecote; Tuna with caramelized onions; Steak Tartar; Truffled pasta with reduced meat sauce; Cod with peppers; Roasted sea bream.
Fermentation temperature 28°C. At least 18 months in American oak barrels.
